ok thought i would collect togther some of my recipes who knows i may do a cookery book one day something along the lines of cooking with baileys^_^

from a post oooh about two years ago now

see now the spell checker is getting used to me it didn’t even bat an eyelid when i typed that title 🙂 or maybe i melted it or something i wonder if its possible to give spell checker a nervous breakdown?  i can imagine i am the one to do it, sorry spell checker my dyslexia i cannot do anything about , but my invention of new words i refuse to do anything about 🙂  i like words, they are meant to be played with, lewis carroll invented so many new words they needed bigger dictionaries just to accommodate him 🙂 see maybe its us english we not only grab, steal, and sneak, other peoples words, our language is full of words we adopted, but we play with the ones we have, and invent new ones all the time,

english poeples ;-why use one word when twenty will do 🙂

so i was going to post , it was going to be rather quickly but then i thought ‘no i shall sit and do this properly, i will only feel bad if i do it quick ,then have to post an apology or suffer lack of sleep, so best just doit good first 🙂

this post will be about comfort food , the ultimate ………….da da da daaahh……….rocky road 🙂 or how i make my staple diet and why you should really join me, i am definitely trying to include other food stuffs into my diet but heck they interrupt my rocky road eating 🙂 by the way you need to have coloured milk ,  i like pink best i dont even bother to assign a pretend fruit excuse to it i just accept pink and that is it 🙂 as your basic drink accompaniment to the gorgeousnes that is rocky road so;

you need a packet of digestives , or you could be inventive,  i was thinking last night i might try other crumbly biscuits as the base hmmm ermm, it has occured to me i hope digestive bicuits are a global thing ermm  if not just pick any plain crumbly biscuit or experiment 🙂 one full packet,

some margarine, butter is too heavy, oil is yukky so i use a bit of marg 🙂 about a desert spoonful

some nutella or chocolate hazelnut spread about a desert spoonful

some castor sugar about two  desert spoons

some baking chocolate, about two large bars i use milk but again go for it experiment

lots of mini marshmallows, a big big bag, for those of you who live in england tesco has them down to a quid a bag right now woo hoo 🙂

now tis bit is personal but i love it if i got money get some maraschino cherrys optional but scrummy 🙂

some sprinkles i experimented last night and the chocolate sprinkles tasted the best but the coloured sprinkles looked the best i tried pink sugar too but that was going just a bit too far 🙂

ok on to the serious stuff 🙂 pop some cupcake cases in some cupcake pans but there is NO cooking 🙂 yeehar for that i hates cooking 🙂 someone was having a laugh when they gave me great cooking skills when i hate cooking !

place digestive or the biscuit you have chosen in a bag and proceed the smash the hell out of it,  i like to adopt a maniacal laugh whilst doing this and throwing my head back in an exaggerated gesture , it makes the neighbour next door shake her head and frown 🙂

mix together in a large bowl the smashed biscuits ,  the nutella about a desert spoonful, plus a desert spoonful of margerine, the sugar, mix together, this should give you a nice crumbly bsicuity  mix place a desert spoon of this mixture in the base of each cupcake case and then gently smooth over and slightly press with back of spoon, this gives you a nice flat base to work with, some people who are like patient and probably serene, organised, and irritatingly well groomed and stuff will then place these in the fridge for half an hour to ‘set’ me however i dont mess about with such nonsense i gets straight on with placing a handful of mini marshmallows on each cupcake , and if your like rich or something you could at this point put some maraschino cherries on each too i usually feel quite sick by this point on account of eating too many maraschino cherries 🙂

now it is perfectly ok to eat most of the bag of marshmallows in fact i find it advisable to buy two bags to cover the ones i eat and still have some left to use in the rocky road so go ahead eat you all know that food consumed during baking has no calorific content 🙂

you then need to put kettle on, and using the boiled water pour into a large pan and place in this water a bowl, you will then break up any chocolate you have left from the two bars you bought  in this bowl to melt,when it has melted allowing time for running out the shop for another bar when you realise you ate the lot and need some more, so pour the melted chocolate onto the marsh mallows  sprinkle the gorgeous coloured sprinkles on and then sprinkles the yummy chocolate sprinkles on, if you have anything left  then pop in it the fridge and later bring out the one or two rocky roads that survived the two hour baking adventure you just had 🙂 on no account let anyone eat these last two , they are for watching twilight with, you may substitute a film of youre choice here but iwont respect you for it 🙂 now go eat and have fun 🙂 🙂 have a super baking time everyone

ok a bit more recent now ^_^

my famous baileys irish cream chocolate cakes


200g caster sugar

200g margerine I always use stork buts its up to you

4 eggs

300g self raising flour I always use bero, or for the super choclatey version use 200g self raising flour and 100g chocolate powder I use galaxy instant chocolate powder

vanilla essence

cream sugar and butter until pale and fluffy or until you can’t bothered anymore

beat in eggs one at a time or like me you can forget beat in two then remember and do one at a time for the last two it don’t really matter

get your electric whisk and give it two minutes full speed or sing she be coming round the mountain a few times you can dance at the same time I use this stage to achieve my usual covered in cake mix look I have perfected

GENTLY fold in flour/flour and chocolate powder if they falls flat during baking then you obviously  didn’t listen to me when I shouted gently did you next time do it gently !

add couple drops vanilla essence one last fold again GENTLY

use desert spoon per cupcake case and it gives you perfect amount for each

place in oven around 180 now I have no idea what that is in any other form i just know that it says 180 on my oven basically not as hot as you would do pizza but not as cool as when you do casserole and bake about 15 minutes is usually spot on

now when no one is looking you can lick the bowl I do its my one meal of the day I look forward too ^_^

ok place on wire racks to cool and

in a bowl mix together a splash a generous splash- ok about half a cup – of baileys irish cream,

then pour some in a mug, go on fill it right up, and place to one side,

take the bowl and mix into the baileys some icing sugar, usually around 100g but more or less until you reach a consistency you are happy with I like it quite thick,

drink some of the  mug you put to one side,

I also add some extra thick fresh cream and some tiny chocolate flakes and mix again,

then drink some more of the mug in fact don’t bother placing to one side keep in hand and sip whilst looking at the mix to decide if it is yummy looking enough

mix with one hand while sipping mug until you are happy

when it is all mixed up and yummy looking try to place what is left after you have finished ‘tasting’ it on the cakes and place some yummy chocolate buttons on the top or chocolate flakes then finish the mug of baileys

these ones I made for brownies my youngest goes to brownies but all the girls have given brownies a go over the years youngest seems to like it there for the moment, anyways these are same recipe as above only make red cream icing which is just red food colouring and icing sugar mixed with single fresh cream or double if you don’t care about calories and covering with tiny marshmallows no baileys but hey these were for the brownies anyways
